Homemade Pancakes

It's late at Sunday night, I've been doing some MAJOR studying for those up coming finals and I am dying for some food! I didn't just want some chips or pretzels but some actual food! But not the ones that would take a really long time to make or those that make a really loud sizzling noises either. So it doesn't wake everyone up at 2 in the morning. PANCAKES! What a wonderful idea, super easy, super simple, and plus making it wouldn't wake anyone up either. Just thinking about the light, wonderful fluffiness and that nice sweet buttery taste was making my stomach grumble even more than it was, haha.
The most hilarious thing happened to me while I was making these pancakes! I thought that I've put every ingredients in the batter. You know flour, butter, egg, and etc but when i was making the first pancake (I always think the first comes out the worst and the last either the largest or smallest of the bunch, haha** ), it came out funny. Literally, it did not look it a pancake! So I just added some flour because maybe it was too runny, then I added a bit more of milk. Well because I like quite a bit of milk in my pancakes. Then I had an epiphany, I forgot the baking powder!! So after adding a few things to the batter, I made the second pancake and it came out correctly. I felt so silly, that I've forgotten the baking powder. But now after I made that whole batch, YUUMMM!!


 ** I always add cinnamon and sugar between each layer, you should try it. It is DELICIOUS! **

Ingredients: 

2 cups of all-purpose flour

3 teaspoons of baking powder

1 3/4 cups of milk

1 egg

3 teaspoons of butter, melted

1 teaspoon of salt

2 1/2 teaspoons of sugar

Directions

1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

 2. Heat a lightly butter griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
