Blueberry Cinnamon Muffins



It is time to whip up some of those tasty blueberry treats! Blueberry muffins and cheesecake being my absolute favorite! Just the thought of them is just so mouth watering, ahhh... So I just wanted to share my little experience with blueberries with you. I always try to find all different types of blueberry recipes online and tweaking them a bit to make them my own recipe or just winging it on the recipes. This is time, I was experimenting with some cinnamon and oh goodness! I think this my most favorite batch out of all that I've ever done!



Ingredients for blueberry muffin batter:

1 2/3 cups all-purpose flour

3/4 cup organic sugar

2 teaspoon baking powder

1/2 cup vegetable oil

1 large egg

1/2 cup milk

splash of salt

4-6 oz fresh blueberries

Ingredients for cinnamon crumb:

1 1/2 tablespoon grounded cinnamon

1/4 cup room temperature butter, cubed

1/2 cup organic sugar

1/3 cup all-purpose flour

Directions:

1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
 
2. Combine 1 2/3 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into another mixing bowl; add the egg and milk to the mixing bowl. Mix this with the dry mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
 
3. To Make Cinnamon Crumb: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
 
4. Bake for 25 to 30 minutes in the preheated oven, or until done.
